The Monovarietal Hojiblanca La Chinata is the olive juice of the Hojiblanca variety, very characteristic of Andalusia, being found mainly in the provinces of Seville, south of Cordoba and Malaga. In these areas, we collect only those fruits that meet the properties that we consider fundamental to obtain an Extra Virgin of very high quality.
From early olive harvest we manage to develop a higher quality EVOO and thus guarantee the conservation of its organoleptic properties.
Only through this selection system, can we guarantee our customers an Extra Virgin of which we are completely sure in terms of quality.
The Hojiblanca variety La Chinata is known for its vegetable flavor with sweet touches at the beginning of its tasting, leaving a slight itching in the throat and a final aftertaste of almonds. Also, its aroma reminds of fresh fruit, such as freshly cut grass, and white flowers.
It is the ideal variety of EVOO for oily fish such as tuna or salmon, as well as for meat or fish carpaccios.
